Soil and Environment (“Terroir”) :
Soil : Clay/shale
Steep slopes (Mountain Fitou)
Mediterranean Climate : very dry air, medium annual temperature : 15°C, 339 days of sunshine each year

Grape varieties (“Cépages”) :
70% Mourvèdre
20% Grenache Gris & Noir (smooth, mellow, delicate, creamy, velvety)
10% Syrah (spirit and elegance, persists in the mouth)

Yield :
20 hl/hectare

Wine production (“Vinification”) :
Maceration 1 hour then “saignée” – the juice is drawn of the graped.
Fermentation from indigeneous yeasts at a controlled temperature of 13°C maximum

Maturation (“Elevage”) :
Stainless steel vats

Taste (“Dégustation”) :
Colour : Clear rose
Nose : Flowery, violets
Palate : Very aromatic, red fruits, “gras”, persistant
